Desi ghee, also known as clarified butter, is a staple ingredient in Indian cooking. It is made by simmering butter to separate the milk solids from the golden liquid. The process of making desi ghee is a time-consuming but rewarding one, resulting in a rich and flavor-packed cooking fat that is both delicious and nutrient-rich.
To make desi ghee, unsalted butter is first heated in a heavy-bottomed pan over low heat. As the butter melts, it separates into three layers: the milk solids, the liquid fat, and the foam on top.
